Freeze-dry, as its brief name suggests, is a seaworthy drying process of materials that have water content within them. Firstly, the material is frozen solid, then the water in it is turned into vapor through sublimation. The vapor is then removed, preserving the material.

This process prevents the formation of micro-organisms and chemical reaction between the solute and solvent, allowing the product to be preserved for long periods of time and maintain its natural state.

The method of vacuum freeze-drying is a process of liquid → solid → gaseous. In this process, the "liquid bridge" between the solution particles is turned into "solid bridges". This fixes the relative position of the particles and eliminates any surface tension between the two particles. And as the solvent continues to evaporate, the "solid bridges" become fewer and fewer, until they completely disappear. Although the particles' relative positions still remain the same.
